A great knife can change your life.  

I believe that one perfect knife can change your life in so far as it changes the way you relate to preparing and eating food for the positive. 

I also know that there are as many ‘perfect knives’ as there are hands and personalities! What’s best for you will depend on the range of tasks you’ll be up against in the kitchen, your physical environment, and your comittment to maintenance (washing, drying, honing, sharpening etc.).  

While the best knife is really just the best knife for you, some basic information, a few general principles, and a little technique are both easy to learn and go a long way.
